Easy Chicken Stew Recipe
Ingredients
Chicken – 1 kg
Onion – 500 – 600 g
ginger – 1piece(1 inch)
garlic – 15 cloves
curry leaves – 3 leaves
coconut – 1
turmeric powder 1 tbsp
coriander powder – 2 tbsp
green chilli – 3
Coconut oil – 5-6 tbsp
tomato – 1
garam masala – 1 tbsp
black pepper powder – a pinch
Potato – 1
Method
clean chicken cut into small bits. The bony bits are better for this.
drain and marinate with some vinegar for 30 minutes and wash again and drain.
heat oil in a pan and add sliced onions, slit green chillies, ginger and garlic paste and saute. add turmeric powder and mix well. add coriander powder and mix well. add garam masala and mix well.
add a pinch of black pepper powder and mix well.
add tomatoes, cubed potato and chicken and stirr well and cook in low flame untill chicken is tender.
Extract the milk of coconut and add to the cooked chicken and garnish with coriander leaves. Serve hot with appam, bread etc
